The awesome thing about flaked corn is that it has already been gelatinized and dehydrated. This means you can mash it in at a much lower temperature and in much less time. Unflaked corn requires 90 minutes at 190F, but flaked corn only requires 20 minutes at 155F to release its starch. It can be mashed along side your malted grains and it doesn’t need to be milled.
